- 1 avocado (peeled, grated or diced )
- 1/2 onion (chopped)
- 1 cup green, yellow & red bell pepper (chopped)
- 5-6 fresh coriander & mint leaves
- ½ fresh lemon juice
- Rock salt and pepper to taste
In a medium bowl, combine all ingredients. Gently toss until evenly coated. Season with salt, pepper and lemon juice.
